I’ve made this curry paste several times recently, it adds great flavour to any dish, plus it’s packed full of goodness and immunity boosting ingredients for this time of year.
I’ve used it to make masala sauces, added it to soups, and vegetable curries…
I’ve baked eggs into the sauce…
And I’ve made chicken curries for my boys with it.
I highly recommend making a huge amount of it and use it lavishly!

Love it Elaine – how long would you keep it for in the fridge and could I sub rapeseed for coconut oil?

I think I’ve used mine up within a week each time so I couldn’t say any longer than that because I don’t know, but I reckon it would keep for quite a while.
And yes, you could use coconut oil, I used rapeseed oil as it’s flavourless, but the coconut oil would add a nice flavour to it wouldn’t it?

I like the combination of ingredients and flavours which went into this paste Elaine.I am already conjuring up a Chicken tikka recipe using this paste. How long does it stay in the fridge or do you freeze it in small portions. And I was pleasantly surprised that you cook chicken for your kids. Have a wonderful week ahead

Thank you, I cook a lot of chicken dishes for my husband and son, they are not vegetarian, that’s my choice for me, not for me to impose on them 🙂
I’ve kept the paste in the fridge for a week or so before I’ve used it all up but I’m sure it would keep longer. Alternatively, I’ve made sauces with it and kept them in the fridge for over a week. I hope this helps?

I have only used dry powder and every once in awhile ground up my spices, but this looks amazing, Elaine! I can just imagine it in my fridge ready to transform anything!

Oh, Elaine, we’re having the worst winter in recent history. Blizzard after blizzard. Two last week and another today. I’ve been overwhelmed since I got back from South Dakota, not yet still unpacked and that was October. I think Chance and the blog have been kind of a lifesaver and kept me going. Honestly I was operating at such a high level there from crisis to crises that once I got back I went from hyperdrive to nothing and I’m just nesting an recooping. slowly…
