Having already shared the story of my friendship with our darling Selma, now it’s time to make some of her recipes and keep her as close as possible. Cooking is what brought us together so what better way to celebrate an amazing lady and share with all our friends at our Fiesta Friday tribute to Selma.
Like so many of Selma’s recipes, I’ve had this one bookmarked since the moment I first read it; it’s basically me on a plate: chermoula spiced aubergine wedges with tahini sauce and feta (although I used goats cheese on this occasion)…what’s not to love???
To start, I made my own chermoula spice mix based on my knowledge of making chermoula paste, and I used extra roasted ground cumin seeds as Selma stated that she liked roasted cumin:
2 tbsp ground coriander
1 tbsp sweet paprika
1 tbsp paprika
1/4 tsp cayenne powder
1 tbsp dried parsley
2 tbsp dried coriander
1 tsp lemon peel powder
2 tsp garlic powder
Salt & pepper to taste
Mix it all together and bingo, done!
I then followed Selma’s recipe for the rest of the instructions.

I remember this recipe of Selma’s thinking it was very simple and a perfect side dish for when I grilled. I love your chermoula mix and toasted cumin – oh yes! I love the smell when its toasted let alone the flavor…

Selma’s recipe of this Chermoula spiced aubergine wedges really caught my attention since she posted it. Great choice, Elaine. I know from the looks and ingredients used that this dish is a winner. And of course, you re-creating Selma’s recipe, no doubt its good!!!

Your dishes are always art on a plate, from the colors, the arrangement, the spices infused, so very tempting to the palate. :). Selma would have loved your version. Grand job Elaine.
