Daily dishes from the foodbod kitchen..

I prepare various dishes for my daily lunches that I feel don’t necessarily justify their own post, but that might provide some inspiration, so my aim is do some regular ‘daily dishes’ post to share some ideas. (If you follow me on Instagram you will have seen some of these photos already, but here I aim to add more details.)

Firstly, below, is a salad of roasted, cooled and peeled aubergine, with chopped raw ramiro red pepper and tomato, chopped fresh coriander & flat leaf parsley, mixed with some roasted ground cumin, allspice, cardamom, lemon juice and olive oil, and drizzled with tahini…

   
Below is a warm dish of cooked puy lentils with sautéed baby spinach, red onion, garlic and tomatoes, spiced with cinnamon, cardamom, cumin and seasoning, and as a finish, topped with my green sauce..
   
   
Another day another dish, this time harissa spiced roasted aubergine wedges on a bed of braised shredded lettuce & carrot, topped with soft goats cheese & fresh coriander…

   
 

Braised mini gem lettuce with fried courgette & sliced tomato, topped with za’atar spiced muttabal (roasted aubergine dip with garlic, lemon juice, tahini)…

   
 

And yesterday, this tasty concoction:

Courgettes (zucchini) sautéed with olive oil, to which I added cooked quinoa & za’atar, then I added some of my spiced muttabal (it had endless different spices in it that I’d thrown in), stirred and cooked it through..so so good! The warm dip makes a lovely sauce…

   
   Now don’t they look better than any sandwich??? 😉

    Always so vibrant and colorful, love it all. I just saw a recipe today for an eggplant (meatball) recipe with spaghetti sauce. Growing white eggplants in the garden, so can’t wait to try it, and of course I’d use zucchini strips for the pasta.
