Nuggets of sweet potato heaven 🌟 pure joy on a plate ðŸ˜€


2nd May 2014: this is my first ever attempt at reblogging one of my own posts! It’s a recipe that I love and that other people seemed to like and I wanted to share it with new readers who may not have seen it, I hope you like it too…

17th January 2014: Today I had a friend over for lunch and I decided to revisit my sweet potato patties – as you may remember, the last attempt was a bit more splat than pattie!! The flavours were lovely though and it didn’t stop me eating the whole plate of them in one go!

I followed the same lines again with the mix but this time refrigerated it for longer before attempting to shape it or work with it, and added some milled, soaked nuts that I had leftover from earlier in the week. This created a gorgeous dairy free, gluten free, sugar free, healthy, tasty lunch, full of flavour and goodness and plant proteins, just lovely!!!!

I mixed together:
2 large sweet potato, peeled, diced then roasted, boiled or steamed and mashed
4 cloves garlic, minced
1 tbsp fresh coriander/cilantro leaf, finely chopped
4 tbsp quinoa flour
2 tsp cumin
1 tsp paprika
1 red chili, de-seeded and finely sliced
A pile of milled pistachios, walnuts and pecans




The mixture is so nice you can literally eat it as a mash 😀

Today, I made myself stop eating it all and baked it in muffin cases for a defined shape and oven baked goodness for about half an hour at 180C fan….and OMG!!!! Am I allowed to say: I love my own food!!!!!





Eaten with a salad of green leaves and topped with tahini sauce this could be very close to my idea of HEAVEN!!!


When my friend left there was still a couple left…not anymore!! Topped with a spoonful of tahini sauce they went in a flash of pure joy!!!

    Oh, mine too – but for the (arghh!) coriander. Parsley, of course. So: I need to buy quinoa flour – if I must ? Meaning, is there anything less specialised that I could use ?

    Elaine, this is an awesome way to make baked sweet potato. Do you cook the sweet potato prior to mashing in the food processor? Does it mash well in raw state

        Elaine- I tried these except with brown rice flour since I didn’t have quinoa. Mine weren’t half as crispy and pretty as yours look- do you think it’s because of the brown rice flour that I used? Although they were very tasty with the garlic, cilantro and cumin!

        Mine we only a little crispy on top when they first came out of the oven, I think the photo makes it looks like they were more crispy than they were. They are all about the flavour and the sheer loveliness!
